Super Easy Sugar Cookies

1/3 cup butter
1/3 cup shortening
2 cups flour
1 egg
1/2 cup sugar
1 tablespoon milk
1 teaspoon baking powder
pinch of salt
1 teaspoon vanilla
candy sprinkles or red colored sugar
raspberry or strawberry jam

Beat together butter and shortening on medium speed for 1 minute. Add 1 cup of the flour, egg, sugar, milk, banilla, baking powder, and salt. Beat until well mixed. Add the rest of the flour and beat well. Cover dough and chill for a few hours.

Lightly flour counter top and roll out the dough so it is about 1/8 of an inch thick. Use a heart shaped cookie cutter to make cookies.

Place cookies on an ungreased cookie sheet and bake at 375F degrees for 6-8 minutes.

Let cookies cool on racks. Then spread jam on top of half the cookies, and top with another cookie so you have a little "cookie sandwich." Spread sprinkles or red colored sugar on top.


Alphabet Cookies

2 egg whites
1 tablespoon corn starch
1 1/2 cups all-purpose flour
3/4 cup sugar
2 teaspoons vanilla extract
1 stick butter
4 ounces milk chocolate

Preheat oven to 350F degrees.

In a bowl, whisk egg whites. Sift corn starch and flour. Add to bowl. Add sugar, vanilla, and melted butter to bowl. Fold dry ingredients in using a large wooden spoon. Then spoon into a plastic zip lock back and seal. Make a small cut in one corner of the plastic bag.

Line cookie sheet with baking paper. Squeeze plastic bag to make letters of the alphabet. Bake for 10-12 minutes. Remove from oven and cool on racks.

Melt chocolate in microwave then spoon into a plastic zip lock bag. Cut a whole and squeeze over each letter of the alphabet.

It's as easy as ABC!

Chocolate Cornflake Clusters

2 cups cornflakes, crushed
3/4 cups craisins (dried cranberries)
3/4 cups flaked almonds
3/4 cup shredded coconut
3/4 cup sweetened, condensed milk
2 cups melted milk chocolate chips, white chocolate, or peanut butter chips

Preheat oven to 325F degrees. Mix together all ingredients except chocolate chips. Line a cookie sheet with foil and grease. Spoon onto cookie sheet about 1 tablespoon per cluster.

Bake for 15 minutes until golden brown. Remove from oven and cool for 5 minutes. Then spread the bottom of the clusters with the melted chocolate. Let the chocolate harden, then turn clusters over and drizzle more chocolate over the top.
